Opis Szczepy: Carmenere, Carignan.

The grapes were hand-harvested from our vineyards at the foothills of the Andes Mountains, in Maipo Valley. Very best red grapes grown in this area, which offers a diversity of soil types, aspects and altitudes, with a dry mediterranean weather. Very low humidity, free of rainfall and a significant thermic amplitude during the ripening season of the grapes. All the grapes are estate grown, with a great emphasis placed on canopy management, low yields and irrigation in the vineyards. The grapes were strictly selected before the crusher, and both varieties were fermented separately. Cabernet Sauvignon grapes were collected during the first week of April, and Carmenère grapes were collected by the last days of April, between 23 – 25 days later. A 5 days cold maceration (5ºC) period for the grapes, to ensure maximum retention of fruit flavours and colour extraction. Then, fermentation was carried out in stainless steel tanks at 27º- 30ºC. The total maceration period was of 25 days, average time for Cabernet Sauvignon grapes and 21 days, average time for Carmenère grapes. Malolactic fermentation occurred naturally, in tanks and in barriques. Later the wines were blended and 80% of the wine aged in French and American oak barriques for 8 months. After bottling, the wine aged in our cellar for additional 6 months prior to its release.
