Wine making details: All the stems of the grape were removed. Partial crushing of the berries: 20% of berries were crushed to provide some berry aromas and a carbonic maceration character to the wine. Addition of 5 g/hl of SO2 at crusher. Inert gas blanketing. Carbon dioxide gas was dispersed over the must to exclude oxygen from juice. Gentle handling of the grapes in all the process with positive displacement pumps with variable speed control. Must cooling to reduce the temperature immediately after crushing to maintain flavors and aromas and reduce the level of SO2. Cool pre-fermentation maceration for 48 hr to extract primary flavors and color. Fermented in stainless steel tanks with jackets for ten days at 22°C with a peak of 28°C between 10 to 8 Bé. Total maceration period of 15 days. Natural malolactic fermentation took place in tanks at 16°C. No press wine has been added. 20% of the wine has been aged for two months with a variety of different toast French oak. Finned with albumen and cool tartrate stabilization. Filtered just by pressure filter with large diatomaceous (or kieselgur).

Michael Morris and Peter Cowley, vineyard partners and old car enthusiasts, named Te Mata Estate’s Bullnose vineyard after the pre-1928 Morris Cowley car, nicknamed ‘Bullnose’ due to its distinctive radiator. The bull emblem that appears on the label is drawn from the Bullnose car’s radiator crest. As the Bullnose vineyard’s original plantings have developed greater maturity, we have seen a corresponding increase in the palate weight and structure of Bullnose Syrah. Additional syrah clones, imported from France in the mid-‘90’s, have introduced fl oral aromatics and greater complexity. Bullnose ‘06 is a blend of three clones of syrah, hand harvested between 10 and 23 April. These separate parcels were each destemmed and given a traditional warm-plunged fermentation. The resulting wines underwent extended maceration on skins before pressing and malolactic fermentation. They were then run into a mixture of new and seasoned French oak barriques for 16 months’ maturation. During this time, they were regularly topped and racked, before egg-white fi ning, blending and bottling in September 2007. Bullnose ‘06 has a deep crimson colour with aromas and fl avours of fresh blackberries, plum sauce, cinnamon and lavender. It is a rich and supple wine with integrated, soft tannins providing structure and length to the palate. It will continue to evolve in bottle for eight years from harvest.

Callabriga Douro was made in the Douro region, from grapes with the ideal oenological maturation balance. After gentle crushing and complete de-stemming, the grapes were fermented under controlled temperatures, with intense yet gentle pumping-over, followed by skin maceration that allowed full colour, aromatic and phenolic components extraction. Once the malolactic fermentation was complete, the wines were kept separately for about one year in 225 litre oak barrels, and their development carefully monitored and tasted to guarantee the preservation of fruity aromas and the future creation of a final harmonious blend. The final blend was bottled without cold-stabilisation and kept in bottle for around 6 months before being released.
