Product Code: RH19071; Tasting Notes Pinot Noir has been one of the Mornington Peninsula’s shining stars for some time now and the wines just seem to get better and better. They are the perfect illustration of wines that can be wonderfully textured and complex without having to be huge, oaky and tannic. Fruit Pinot Noir grapes from six different vineyards from all over the Mornington Peninsula including six different clones have been blended to make this wine. Maturation This wine was given a cool soak for two days and then inoculated for fermentation in stainless steel tanks. It was then gently pressed and allowed to finish primary fermentation before racking off gross lees. It was inoculated for malolactic fermentation and transferred to French oak barriques (25% new). Some material was allowed to stay on skins for a few days after fermentation prior to pressing. The wine then matured for 9 months, during which it completed its malolactic fermentation. This treatment maximizes the delicate and subtle Pinot flavours, aromas and textures. Technical Analysis Alcohol 12.5%. Best Drinking The Red Hill Estate Pinot Noir drinks well at an amazingly young age and is best consumed within 3 years if you want just the cherries, plums and strawberries. If you want it to walk a little on the wilder side, wait 5 years for extra savoury and gamey characters and for the full monty of Burgundian complexity leave if for at least seven years. Bouquet and Palate The resulting wine shows the familiar perfume, elegance and length with plenty of sweet, juicy mid palate fruit. Soil: Originally alluvial, the soil is a typical land flow of average depth and clayey texture, with some round, smooth pebble of different sizes and basic pH. Harvest: Last week March. The harvest was carried out manually with a highselection in the field, discarding any cluster of a non-satisfactory quality. Transportation of the grapes was made in bins of 500 Kg. Grape ripeness: The most important criterion for assessing the grapes is flavor and tannins structure development, which is done by regularly tasting the fruit and the skin on the vine. Other important conditions of the fruit and vines are sugar level, total acids and pH. The target sugar level for the Cabernet Sauvignon was between 25 to 26°Brix. Wine making details: All the stems of the grape were removed. Partial crushing of the berries: 20% of berries were crushed to provide some berry aromas and a carbonic maceration character to the wine. Addition of 5 g/hl of SO2 at crusher. Inert gas blanketing. Carbon dioxide gas was dispersed over the must to exclude oxygen from juice. Gentle handling of the grapes in all the process with positive displacement pumps with variable speed control. Must cooling to reduce the temperature immediately after crushing to maintain flavors and aromas and reduce the level of SO2. Cool pre-fermentation maceration for 48 hr to extract primary flavors and color. Fermented in stainless steel tanks with jackets for ten days at 22°C with a peak of 28°C between 10 to 8 Bé. Total maceration period of 15 days. Natural malolactic fermentation took place in tanks at 16°C. No press wine has been added. 20% of the wine has been aged for two months with a variety of different toast French oak. Finned with albumen and cool tartrate stabilization. Filtered just by pressure filter with large diatomaceous (or kieselgur).

This is another fine elegant Bullnose, in its subtlety pursuing a totally French path to grape-ripening and thus wine beauty, rather than the more heavy-handed over ripe Australia one. This 2006 Bullnose rates among the top six New Zealand syrahs of the vintage, but in its subtle and fragrant Cote Rotie styling, it is easily underestimated. Michael Morris and Peter Cowley, vineyard partners and old car enthusiasts, named Te Mata Estate’s Bullnose vineyard after the pre-1928 Morris Cowley car, nicknamed ‘Bullnose’ due to its distinctive radiator. The bull emblem that appears on the label is drawn from the Bullnose car’s radiator crest. As the Bullnose vineyard’s original plantings have developed greater maturity, we have seen a corresponding increase in the palate weight and structure of Bullnose Syrah. Additional syrah clones, imported from France in the mid-‘90’s, have introduced fl oral aromatics and greater complexity. Bullnose ‘06 is a blend of three clones of syrah, hand harvested between 10 and 23 April. These separate parcels were each destemmed and given a traditional warm-plunged fermentation. The resulting wines underwent extended maceration on skins before pressing and malolactic fermentation. They were then run into a mixture of new and seasoned French oak barriques for 16 months’ maturation. During this time, they were regularly topped and racked, before egg-white fi ning, blending and bottling in September 2007. Bullnose ‘06 has a deep crimson colour with aromas and fl avours of fresh blackberries, plum sauce, cinnamon and lavender. It is a rich and supple wine with integrated, soft tannins providing structure and length to the palate. It will continue to evolve in bottle for eight years from harvest.
