Dogajolo combines the power and deep colors of a young wine, the elegance and balance given by wood aging, as well as a fruity and fragrant bouquet. Grapes: Sangiovese up to 70%; Cabernet and other varieties up to 30%. The exact proportions can vary with each vintage. Vinification Technique: the two grape varieties are vinified separately, since they ripen at different times. Toward the end of fermentation they are blended and placed in small wooden casks where they slowly complete alcoholic and malolactic fermentation. Finishing: Dogajolo is bottled between the last week of March and the first week of April of the year after harvest. It is excellent when young, but as with any red wine of good mettle, it ages well. Color: deep garnet with violet reflections. Bouquet: very fruity and intense, with hints of cherry, coffee, vanilla and spice. Flavor: full, soft on the palate, complex, well developed. Alcohol: 12-12.5% by volume. Serving Temperature: 15-16°C (59-61°F) the first year, 18-20°C (64-68°F) thereafter. Gastronomy: given its fruitiness, Dogajolo can be paired with first courses and white meats, but shows at its best with full-flavored dishes such as roasts, grilled meats, cold cuts and Tuscan regional specialties.

Zdobywca brązowego medalu w konkursie World Wine Awards magazynu Decanter. Wspaniałe do czerwonych, bogatych mięs, włączając dziczyznę.*** 2005 Le Pinacle or ‘the pinnacle’ is the highest point of the tower on the Chateau at Domaine Sainte Rose thus symbolically, this superbly structured Syrah is the top of our red wine range. The grapes were handpicked from a carefully selected parcel of vines situated on gently sloping terroir. After gentle extraction and pressing, this wine spent twelve months aging in French and American oak barrels. Colour: Opaque, almost black red. Nose: Magnificently rich plum jam and liquorice aromas with hints of dark chocolate. Palate: Big, expressive and intense flavours. Black fruit dominates but is combined with mocha and coffee, which provides a round, smooth finish. Drink: Now until 2014. The infamous 2008 Guide Hachette highly recommends the Domaine Sainte Rose Le Pinacle Syrah 2005, giving 2 out of 3 stars! "This vintage climbs to new summits. On the nose, perfumed black berries meet sweet spice and finely measured oak. Ample and round with accents of vanilla." Guide Hachette, 2008 Jancis Robinson, MW picks Le Pinacle Syrah 2005 as one of her dozen favourite reds in her article entitled "France's handcrafted, hidden treasures". Jancis Robinson, MW Financial Times, September 2007. "Quite exceptionally dark purplish crimson. Yes, Very Syrah: leather and tar and the ripe canon of luscious marinaded game. Very New World and open and fair bit obvious and jagged rather than typically Languedoc but very successful in that idiom. Massive alcohol is pretty obvious but the acidity and tannins are not obtrusive. This should have a long life and could already be enjoyed." Jancis Robinson MW, www.jancisrobinson.com , September 2007 "Dense, complex - notes of blackberry, morello cherry, liquorice & spice. Classic Syrah - intense, pure fruit expression, with impressive structure & the oak & tannins knitting in nicely. The luxurious mouthfeel calls for slow-cooked meat casseroles & hard cheeses, like mature Gouda or a farmhouse Red Leicester. " Neil Courtier, Grape Sense, October 2007 "A rich, smoky and spicy bramble nose. Sophisticated perfumed bell pepper and violet fruit with elegant ripe tannins. Supple, mineral and classy." Commended! Andrew Jefford, Decanter World Wine Awards, 2006 "100% Syrah from the d'Oc, this wine is a careful selection of Syrah vineyard parcels, hand-picked and vinified for one year in French and American oak. It is dramatically dark and has a lovely nose, where finely seasoned berry fruits and chocolate intermingle with little camphor and floral notes, plenty of exotic, sandalwood spice and warming vanillin. On the palate the concentration and structure of the juicy, lithe Syrah fruit pushes through the mid-palate, with a sweep of smoky oak, ripe, chocolaty tannins and cherry-skin acidity adding lots of complexity. The fruit in this wine seems much better matched to the oak, and Domaine Sainte Rose's suggestion of five or six year's cellaring seems reasonable. A great wine from a moderate year this one, and very good indeed/excellent." Tom Cannavan, wine-pages.com, 2005

Balance and ripe tannins mean it can be drunk or kept. +++ BULLNOSE SYRAH '06 Review from Geoff Kelly, Wine Commentator, www.winereviews.com, MARCH 2008 One sniff and the bouquet is floral and aromatic in the style of fine subtle versions of Cote Rotie, striking that perfect equipoise between excess florality bespeaking under-ripeness, and the florals of over-ripeness. This is another fine elegant Bullnose, in its subtlety pursuing a totally French path to grape-ripening and thus wine beauty, rather than the more heavy-handed over ripe Australia one. This 2006 Bullnose rates among the top six New Zealand syrahs of the vintage, but in its subtle and fragrant Cote Rotie styling, it is easily underestimated. Cellar 5-15 years. ++++++++ Sustainable Winegrowing New Zealand accredited. This wine is made in a traditional manner and fi ned with eggwhite. It contains no residual sugar or added tannin. ++++++++ FIRST PLANTED IN 1990, THE BULLNOSE VINEYARD’S OLD RED-IRON SOILS PRODUCE TE MATA E S TAT E ’ S F I N E S T S Y R A H . Michael Morris and Peter Cowley, vineyard partners and old car enthusiasts, named Te Mata Estate’s Bullnose vineyard after the pre-1928 Morris Cowley car, nicknamed ‘Bullnose’ due to its distinctive radiator. The bull emblem that appears on the label is drawn from the Bullnose car’s radiator crest. As the Bullnose vineyard’s original plantings have developed greater maturity, we have seen a corresponding increase in the palate weight and structure of Bullnose Syrah. Additional syrah clones, imported from France in the mid-‘90’s, have introduced fl oral aromatics and greater complexity. Bullnose ‘06 is a blend of three clones of syrah, hand harvested between 10 and 23 April. These separate parcels were each destemmed and given a traditional warm-plunged fermentation. The resulting wines underwent extended maceration on skins before pressing and malolactic fermentation. They were then run into a mixture of new and seasoned French oak barriques for 16 months’ maturation. During this time, they were regularly topped and racked, before egg-white fi ning, blending and bottling in September 2007. Bullnose ‘06 has a deep crimson colour with aromas and fl avours of fresh blackberries, plum sauce, cinnamon and lavender. It is a rich and supple wine with integrated, soft tannins providing structure and length to the palate. It will continue to evolve in bottle for eight years from harvest.

Planting down the middle of the rows gave the same density as a vineyard in Saint Emilion. Additionally, on the original vines, a sucker-per-vine was allowed to grow. At which stage the original vine was cut off, almost halving the height of the vines down to what one would expect from a hand-picked vineyard in Saint Emilion. The vines are now pruned on the ‘double guyot’ system. The secondary shoots are removed and the vines deleafed and bunch-thined. The grapes are handpicked and vinified as the other wines of the Chateau - to the standard of a Saint Emilion Grand Cru. Pezat comes in three colours. The main wine is a lavish oak-aged red wine. The rosé represents a ‘saignée’ of the pre-fermented free-flow juice of our Saint Emilion Grand Crus, and the white is a product of crisp, barrel-fermented Sauvignon Blanc and Semillon. 2006 Vintage. Opis The kernel for Pezat is a vineyard planted literally a pace outside of the Saint Emilion Appellation - towards the river from Château Teyssier near to Branne. The kernel for Pezat is a vineyard planted literally a pace outside of the Saint Emilion Appellation - towards the river from Château Teyssier near to Branne. Previously this large vineyard consisted of high trellised vines planted 3 metres apart - the norm in Entre-des-Mers where grapes are machine picked. Francois Mauss, GJE, Posted on eRobertParker April 2007. “Then 7 wines from Mr Maltus (Château Teyssier and Le Dôme): I must confess I was really impressed by a very good basic wine (less than € 7): PEZAT.” Jancis Robinson, April 2007. “POINTS 14.0. Drink 2008 Quite deep crimson. Sweet, almost sweaty nose. Inky oaky tannins on the finish. ” Wine Enthusiast Magazine. “POINTS 86. A fresh, soft, citrus-flavored wine with freshness that comes from the green pear and lemon sharpness. Touches of wood round out a delicious, easy wine. — R.V.” ************************* 2010 Vintage Neal Martin, Wine Advocates POINTS 87 - A blend of 85% Merlot and 15% Cabernet Franc. This has a well defined nose with baked red cherries, a touch of briary and a hint of chalk dust. Simple on the palate, nicely balanced, crisp blackberry with a touch of pepper on the finish. This is a fine Bordeaux Superieur from Jonathan Maltus. Wine Spectator POINTS 86-89 - Pure, with a lightly firm damson plum and pomegranate frame to the core of blackberry and black currant. A mineral edge is starting to show on the finish. —J.M. Robvert Parker POINTS 86-88 - An excellent effort from Jonathan Maltus, this value-priced, lower-level Bordeaux is normally a blend of 75% Merlot and 25% Cabernet Franc. The 2010 is exactly what one expects from an inexpensive but well-made Bordeaux. Soft tannins, deep berry fruit, a nice, medium-bodied, fleshy texture, and clean finish all make for a delicious wine to drink in its first 3-4 years of life. Drink: 2011/15.
